Lovely cupcakes with raspberry frosting


So easy to make and you can't get enough of them!

Makes 12 cupcakes.

For the cupcakes:
1 cup granulated sugar
114 gram usalted softened butter
2 eggs
2 tsp vanilla extract
2 tsp baking powder
1/8 tsp salt
1 1/3 cups all purpose flour
1/3 cup milk 

For the frosting:
114 gram unsalted softened butter
½ cup raspberry jam
½ tsp vanilla extract
450 gram powdered sugar


And some fresh raspberries, to decorate.


Now preheat your oven to 180 C, and line your cupcake tin.

Cream together the sugar and butter. Add the eggs, the vanilla and cream until you get a smooth mixture. Add the dry ingredients and slowly add, while mixing, the milk. Please note to not overmix it.

Scoop together the batter into your cupcakes. Make sure it's filled 3/4 of the way up, because they will rise. Bake them for 20 minutes and let them cool for about 45 minutes before you are going to frost them.

To make the frosting you have to combine  all the ingredients exept the fresh raspberries. Mix it together and add it in a piping bag fitted with a large star tip. Pipe the frosting onto the cupcakes and decorate them with a few fresh raspberries.

Then it's time to eat them! Enjoy!
